With the snow finally melting, New Orleans is embracing that quintessential winter vibe and hoping to find that snowy paradise magic once again. Fortunately, King Brasserie & Bar has just unveiled its latest winter tasting menu, the Tour d'Azur : French Alps, which blends Alpine and Louisiana cuisines in a union of rich, hearty, and distinctive flavors that would warm anyone up."Our Tour d'Azur map is not always about beautiful Mediterranean seaside cities. For this Tour, we turn our focus to the breathtaking view of the Alps and shift our inspirations to wild game items such as venison, duck, and wild boar and transition our larder to winter black truffles and Alpine style cheeses." said Executive Chef Samuel Peery in a press release.
Exploring New Heights
From January 23 to the end of March, the Tour d'Azur tasting menu will offer a three-course experience, with each course offering two options that explore the synergies between the regions starting at $44 per person. Additionally, this menu comes highly recommended with an optional $26 curated wine pairing to compliment the whole experience.The first course serves Salt Roasted Beets or French Onion Soup featuring local Louisiana winter vegetables alongside traditional Alpine cheeses such as Raclette and Comte, starting this culinary journey with a light yet pleasant note. Recommended with Jacquère, André & Michel Quenard or the Chignin Vin de Savoie Blanc, 2021.
The main course offers either a Blood Orange Lacquered Duck Leg or a Wild Boar Ragu, which features hearty, slow-cooked wild game meats accompanied with savory side dishes that brings out the tender and cultural harmony of the meal. Recommended with Mondeuse, Domaine Giachino or the "Black Giac" Vin de Savoie Rouge, 2022.
The final course offers two desserts between a Paris-Brest or a Warm Fig Pudding complimented with Bergeron pecans and winter figs paired with chestnuts, respectively, that would be sure to bring a sweet and satisfying conclusion to this culinary trek to the French Alps' distinct cuisine.
