Delmonico Steakhouse in Fairmont New Orleans
New Orleans' dining scene is set for a new addition as Chef Emeril Lagasse partners with Fairmont Hotels & Resorts to open a new location of Delmonico Steakhouse at the upcoming Fairmont New Orleans, scheduled to debut in fall 2026.
The announcement marks the first expansion of Delmonico Steakhouse beyond Las Vegas, where Lagasse originally launched the concept more than 25 years ago. The new restaurant will anchor the culinary program inside the Fairmont, currently being developed in the historic former Bank of New Orleans Building, steps away from the French Quarter.

A Steakhouse with a New Orleans Approach
Delmonico Steakhouse is known for its refined approach to the traditional American steakhouse. In New Orleans, the restaurant will continue that identity with a focus on prime cuts of beef dry-aged in-house, elevated preparations, and bold Creole-inspired flavors rooted in Lagasse's culinary heritage.
The beverage program will also play a central role, featuring an extensive wine list and a curated selection of drinks designed to complement the menu and enhance the upscale dining experience.
Emeril Lagasse's History in New Orleans
For Lagasse, the expansion carries personal impact, tying one of his restaurant concepts back to the city where he has deep roots.
"I opened the first Delmonico Steakhouse over 25 years ago in Las Vegas, and it has always been a dream of mine to bring this iconic concept to New Orleans," Lagasse said in a press release. "We honor the classic American steakhouse, but we do it with our own New Orleans spirit: big flavors, warm hospitality, and genuine care for every guest.
The Café by Emeril
Alongside Delmonico Steakhouse, the partnership will introduce The Café by Emeril, a new all-day dining experience focused on breakfast and lunch service.
Designed as a casual complement to the steakhouse, the café will extend the culinary offerings at Fairmont New Orleans and provide additional access points for both hotel guests and locals seeking a daytime dining option in the area.
Fairmont's Vision
Fairmont New Orleans leadership says the partnership reflects the brand's ambition to position its hotels as cultural and culinary destinations.
"Delmonico Steakhouse, together with the hotel's additional dining venues, will create a vibrant culinary destination, offering unforgettable dining experiences for both hotel guests and locals alike," General Manager Eric Overstreet said in a press release.
The hotel, scheduled to open this year, will also feature a rooftop bar, lounge, and speakeasy, reinforcing its role as a multi-faceted hospitality destination in the city.

A New Chapter
The Fairmont New Orleans project is part of a larger redevelopment effort aimed at restoring a historic landmark while reintroducing the luxury hotel brand to the city.
For The Emeril Group, which operates restaurants across New Orleans, Las Vegas, and beyond, the collaboration expands its portfolio and deepens its footprint in large cities.
As construction continues toward a fall 2026 opening, the partnership signals the blending Emeril Lagasse's culinary legacy with Fairmont's luxury hospitality platform in New Orleans.
