Welcoming Coraline's
Beau Rivage Resort & Casino has spiced up its culinary lineup with Coraline's, a Gulf-to-table waterfront gem. The Biloxi hotspot, which opened on June 17, is now accepting its first wave of reservations.
"Coraline's Gulf view, French Quarter-inspired design, and locally sourced seafood menu will showcase the region's rich heritage and culture in a setting that excites all the senses," Beau Rivage president and COO Brandon Dardeau said in a press release. "Diners can look forward to best-in-class hospitality and authentic regional cuisine in a stunning venue that overlooks the Mississippi Sound."
Beau Rivage executive chef Kristian Wade and Coraline's executive chef Austin Dedeaux have honed their three decades of combined experience to produce an ingredient-driven menu featuring premier seafood such as oysters, crab, shrimp, snapper and redfish.
"Coraline's pays homage to the Gulf of Mexico. [...] Unmistakably Southern, welcoming and refined, Coraline's personifies traditional Cajun and Creole-inspired recipes presented with a modern hometown twist." Chef Wade said in a press release.
Dive Right In
Along with straight-off-the-boat selections, Coraline's features fresh fish flown in daily from around the country, highlighted in their seasonal "catch-of-the-day" specials.
Coraline's Redfish Court-Bouillon, slow-simmered with holy trinity, blue crab, shrimp and tomatoes, is served on a palette of white rice with French bread and is a standout dish among Coraline's vibrant seafood menu. For diners not-interested in seafood plates, Coraline's menu offers a variety of non-seafood dishes including Sticky Chicken Ballotine, Blackened NY Strip, Filet Mignon, and the Prime Pork Porterhouse.
Coraline's French Quarter-inspired layout features an abundance of intricate foliage, accenting the presence of oak furniture and dramatic green marble patterns to produce a sophisticated dining experience.
Coraline's, which is located adjacent to BetMGM on the south side of the gaming floor, will be in operation on Sunday, Monday, and Thursday from 4:30 p.m. to 10 p.m., as well as Friday and Saturday from 4:30 p.m. to 10:30 p.m.
