Chappellet Winery from Pritchard Hill Vineyard, one of the oldest wineries in Napa Valley, brought out their best and brightest wines for an expertly-paired five-course dinner at Restaurant R'evolution. Up first was the fresh and light Hamachi Crudo (a raw fish dish) paired with a fruity 2017 chenin blanc. My favorite dish of the night was the Black Tie Scallop topped with Choupique Caviar and gold leaf paired with a 2016 oaky chardonnay.
The more meaty courses consisted of Roasted Squab with Red Rice Grits which was tasted alongside a 2016 mountain cuvee. Then we were served a Duo of Pork Belly Porchetta and Korean BBQ Beef Navel. Two wines were served back-to-back for this course. The 2015 signature cabernet sauvingnon was tasted with the 2014 Pritchard Hill cabernet sauvignon.
Finally, we were given desserts of a variety of cheese and Mignardise.
