July 10th is National Piña Colada Day! Legend has it that the Piña Colada was invented by the famous pirate Roberto Cofresí in the early 19th century. El Pirata Cofresí (as he was known) mixed coconut, pineapple and white rum together and served it to his crew to boost morale. For a modern take on the classic cocktail, try swapping out rum for Monkey Shoulder malt whisky. With its subtle hints of vanilla, Monkey Shoulder pairs beautifully with fresh fruit juice for an extra smooth poolside cooler.
Monkey Colada
1 part Monkey Shoulder
1 ½ parts fresh pineapple juice
1 part coconut purée
½ part coconut juice
1 part fresh lime juice
2 dashes Angostura bitters
2 parts ice
Instructions: Add ingredients to blender and blend until smooth. Pour into a Hurricane (or tall) glass and garnish with a pineapple wedge. Tip: For a sweeter finish, add a dash of sugar syrup.
