Carl Schaubhut has created a fantastic menu of Cajun favorites made modern at DTB at 8201 Oak St. DTB stands for Down the Bayou, and this lovely corner restaurant absolutely conveys a sense of the small towns in Cajun Country: bronze fish heads welcome you as you walk into the cypress lined restaurant with Spanish moss-strewn chandeliers, but the white walls and light furniture gives it a much fresher feel than the actual bayou.
My favorite appetizer was the stuffed mushrooms and off-menu brisket-stuffed peppers which paired very well with the fresh-tasting, imaginative cocktails. I can't wait to go back for the brand new bruch beginning just in time for Jazz Fest; the best part is that brunch occurs on the weekends and Mondays so that the service industry folks can also enjoy it.
