Chef Ryan Wins The Great American Seafood Cookoff

Chef Ryan Trahan was crowned King of American Seafood at the 2018 Great American Seafood Cookoff held at the Louisiana Restaurant Association Convention and presented by Lt. Gov. Billy Nungesser and the Louisiana Seafood Promotion and Markting Board. The Blug Dog Cafe chef created a Cracklin' Crusted Red Snapper with Pickled Crawfish Tails, Buttermilk Chili Consomme, Spring Vegetables, Burnt Leek Oil, and Bowfin Caviar. He came in first among 11 other chefs who came from all over the U.S. to compete. Chef Marc Orflay of ReelHouse in Massachusetts won second place with a marvelous Deconstructed Clam Bake. 

The LRA Convention was packed with vendors showing off their foods or what their products could do to make chefs create their signature dishes.
